फल, सब्जियों और दालों से कम हो सकता है बीमारी का खतरा (Consuming fruits, vegetables, and dals cuts risk of death)

नई दिल्ली, एक आम धारणा है कि फल और सब्जियाँ सेहत के लिये फायदेमंद होती हैं। लेकिन कई भ्रान्तियाँ भी हैं कि फल अथवा सब्जियों की कितनी मात्रा का उपभोग सेहत के लिये फायदेमन्द हो सकता है। भारत समेत 18 देशों में किये गए एक अध्ययन से अब यह स्पष्ट हो गया है कि प्रतिदिन 375 से 500 ग्राम फल, सब्जियों और दालों का सेवन करने से मौत का खतरा 23 प्रतिशत तक कम हो जाता है। यह अध्ययन हाल में लैन्सेट शोध पत्रिका में प्रकाशित किया गया है।

विश्व स्वास्थ्य संगठन (WHO) प्रतिदिन 800 ग्राम फल अथवा सब्जियों का सेवन करने की सलाह देता है। जबकि इस अध्ययन के मुताबिक डब्ल्यूएचओ द्वारा संस्तुत की गई फल और सब्जियों की लगभग आधी मात्रा का सेवन करने से भी बीमारियों से बचा जा सकता है। यह खबर निम्न आय वर्ग के उन देशों के लिये उपयोगी हो सकती है, जहाँ लोग फल और सब्जियों का उपभोग वहन नहीं कर पाते। आलू समेत अन्य कंदों और फ्रूट जूस को अध्ययन में फल नहीं माना गया है। हालांकि बीन्स, ब्लैक बीन्स, मसूर, मटर, चना और लोबिया जैसी फलियों को अध्ययन में शामिल किया गया था।

करीब एक दशक तक चले इस अध्ययन में 18 देशों के 35 से 70 वर्ष की उम्र के 135,335 प्रतिभागियों को शामिल किया गया था। अध्ययन में ऐसे लोगों को शामिल किया गया था, जिन्हें स्वास्थ्य सम्बन्धी कोई समस्या नहीं थी। उनकी जीवनशैली, खानपान, स्मोकिंग की आदतों, शारीरिक गतिविधि और शराब के सेवन, सामाजिक-आर्थिक स्थिति, जैसे- शिक्षा, रोजगार और आमदनी सम्बन्धी आँकड़े एकत्रित किये गए।

अध्ययन के अन्त में मृतकों की संख्या, हृदय सम्बन्धी बीमारियों के मामले, हार्टअटैक और स्ट्रोक के मामलों को दर्ज किया गया। इसके बाद यह जानने की कोशिश की गई कि अधिक मात्रा में फलों, सब्जियों और दालों के अधिक उपयोग से सेहत पर क्या असर पड़ता है।

अध्ययन में शामिल चेन्नई के डॉ मोहन्स डायबिटीज स्पेशलिस्ट सेंटर (Dr. Mohan’s Diabetes Specialties Center) से जुड़े शोधकर्ता डॉ वी. मोहन ने इंडिया साइंस वायर को बताया कि कोलेस्ट्रॉल को सन्तुलित रखने, इंसुलिन रिस्पांस में सुधार, रक्तचाप में कमी, रक्तवाहिकाओं में वसा के जमाव को कम करने और कोशिकाओं की कार्यप्रणाली को बेहतर करने में फल- सब्जियों में मौजूद विटामिन-सी, विटामिन-ई एवं कैरोटेनॉयड्स जैसे एंटी-ऑक्सीडेंट्स और फाइबर महत्त्वपूर्ण भूमिका निभाते हैं।

डॉ मोहन के अनुसार “फल और सब्जियाँ सेहत के लिये फायदेमन्द होती हैं, इसे पुख्ता करने के लिये दीर्घकालिक वैज्ञानिक तथ्य मौजूद नहीं थे। इस लिहाज से यह अध्ययन काफी महत्त्वपूर्ण है। इससे स्पष्ट हो गया है कि फलों, सब्जियों और दालों का उपयोग हृदय सम्बन्धी बीमारियों से बचाव में सहायक हो सकता है।”

अमेरिका के हारवर्ड स्कूल ऑफ पब्लिक हेल्थ से जुड़ीं प्रोफेसर एस्टेफैनिया टोलेडो के अनुसार “फल-सब्जियों का अधिक उपभोग तभी फायदेमन्द हो सकता है, जब मीठे पेय, रेड एवं प्रसंस्कृत मीट, संतृप्त वसा, परिष्कृत अनाज एवं अत्यधिक मिठाई का कम सेवन किया जाये।” एस्टेफैनिया टोलेडो इस अध्ययन में शामिल नहीं थीं। उन्होंने बताया कि हानिकारक खाद्य पदार्थों के बजाय पादप आधारित खाद्य उत्पादों का उपयोग समग्र आहार पैटर्न को बेहतर बनाए रखने में फायदेमन्द हो सकता है।
